I am able to  set the

set LM_LICENSE_FILE=7788@serverxxx;7788@serveryyyy
set PTC_D_LICENSE_FILE=7788@serverxxx;7788@serveryyyy

but I have still for the first startup to fill the server license Option (standart professioneal or essential)

and also the licences server

does someone knows how to set those options in my startup batch ?

Those settings come from your preferences, so unless your machine has a "user_prefs"  file in %appdata% folder so will always see that startup dialog.
Once illustrate has been run for the first time your user prefs file will be created and you shouldn't see the dialog again (unless you check the "Choose license options at startup" option.
