APP doesn't actually do anything with EPS files. For certain print drivers, the EPS is passed through (I think this applies only to PDF and PostScript drivers). If there is an embedded TIFF preview then that is what is displayed on screen (and in the print drivers that don't have passthrough EPS). If the EPS doesn't have an embedded preview then APP simply displays a crossed-out box.

To enhance the resolution of your on-screen EPS then you will need to increase the resolution of the embedded TIFF preview. According to Adobe there are some options for the EPS preview when saving from Adobe Illustrator: https://helpx.adobe.com/au/illustrator/using/saving-artwork.html#save_in_eps_format

The preview image is displayed in applications that cannot display EPS artwork directly.

I would like to be able to display EPS artwork directly.

If the EPS already has a TIFF preview, APP will use that by default and we cannot change the resolution of that. Do your EPS graphics have a preview?
