I use the offset coordinate sytem datum point tool to enter the xyz numbers.
Start the tool select a coord sys point.
Click in the lower box to make your points.
Change the values.
Then I go to insert / advanced / pipe and follow the prompts.
Not sure if it is the best , but it works for me.

are those xyz points the virtual corners (bends) or ragular points along the pipe?

They represent the intersection of two lines. I think there may be a better way to use XYZ data then INSERT, ADVANCE, PIPE. Possibly a family table. I don't have the piping extension.
