Well so far I've tried the following in my symbol:
putting a space on both side... C_&_K ....didn't work
putting the & in quotes

putting in double &&... C && K ...didn't work
using alt 38 or alt 038 .... didn't work
No luck yet for getting the ampersand & in my symbol

The symbol I am trying to insert in my drawing uses variable text for this field and it's a completely open field as far as it doesn't have just a few potential entries.
As Stefan suggested, I was able to create a parameter (i used a drawing parameter that I called "ck") and then I used it in the symbol. It worked. Not the cleanest of solutions, but it was a solution...
For the variable text in my symbolI used... &CK:D .... I defined a drawing string parameter called ck and set the value to TEST CAP, C&K.
That's my best solution so far, I appreciate all the help.
