You may wish to examine the values for the detail setup option 'sort_method_in_regions', which tackled this problem for repeat regions in drawings, to figure which of the options there are legitimate for sorting instances, so that we don't implement one reasonable alternative but miss implementing another when it would be cheap+easy to do alongside.
Also, may wish to consider the question of whether, this being a UI matter, you would want a single config to govern it, or a more complex implementation where individual generic models having family tables could say what sort method they want, with a default of using a method specified by a config.
I would argue that this is less about family tables and more about Creo in general. This is simply leftover from the Unix roots. See these other ideas:
