In creo3 you cannot easily modify text styles. You sure cannot do it when you are editing the text, unless you go to the top of the screen and click on a tiny inconspicuous arrow that pops out the text style window.
Put the Text Style in the RMB drop down list, AND the tiny arrow is not intuitive, make it better.
