I want to run the toolpath as in the attached video (contorniture.avi) but using volume roughing or other, "not trajectory" because I want to use the STEP_OVER.

Cannot see your video. Maybe you could just post a picture of the path you are wanting to create.

Custom trajectory will let you use step over for profile cutting. That might be the only way to do what you want to do. Particularly if you are trying to make the path as efficient as possible to reduce time, etc.
