First you need a physical properties add-in to provide the thermodynamic and transport properties. In addition to the one @ValeryOchkov mentioned above, CoolProp is another open source (free) materials library that contains properties for other materials in addition to water and has add-ins for a number of codes including Mathcad and Excel. There are a couple of "non-free" add-in codes as well, including NIST RefProp (GUI will generate your plot for you, has an Excel add-in, but no Mathcad add-in yet) and Prode Material Properties (Excel add-in included and 3rd Party Mathcad Add-in from Harvey Hensley). These will all get you the property values you need.
The other issue is that Mathcad, neither 15 nor Prime, will give you the publishing quality chart that you attached. To emulate that kind of quality, an Excel add-in is the better choice.
