Capturing two different variations in a part

We are trying to capture two different variations or designs in a part. In each variation several dimensions on the part change. Is there an easy way to capture both the varaitions and easily switch between the two? We tried to use family tables. But it looks like once you use a specific instance of the family table in your assembly you cannot easily change it to another instance of the family table.

Would love to hear ideas ....

You should definitely be able to do that. The image below shows the family table model and then its use in an assembly. If you are getting the same instance in your assembly, try the Replace action and chose a different instance  from the table.
