I noticed that I don't see windchill being talked about much any more. Does windchill still work with 64 bit and Microsoft 7?

Very much so.
With Windchill 10, only 64bit servers are supported in a production environment. For Windows this means 2008R2 server.
I have users on Windows 7 64bit running Wildfire 4 and Windchill 9.
We are in the initial upgrade phase of moving to Windchill 10 and switching to SQLServer from Oracle.
