In Windchill 11.0 you have the ability to create custom views for document structure trees (Manage Structure Views). There is a "Set Sorting" option for these views, but it does not work. The sorting set here is not applied to the Document Structure view. PTC has told me this is working as designed and the Set Sorting option should not have been included in the custom view dialog window. I suggest that sorting should be included in custom views for document structures. This avoids having to manually sort on selected columns every time the structure page loads.
