We would like to have support for Windows Server 2019 for all of our Windchill 12 servers. 

Currently the Adapter for PDF with Adobe Experience Manager forms & Microsoft Office is not supported on Windows Server 2019.

We now have support for Windows Server 2019 and MSOffice Pro 2019 as of the 6.5.11 release of AEM.
