Isn't there a db.properties entry we can add to see the generated SQL statements that the method server is generating?

Not aware of any. But - One can easily see all using various database tools directly, including for example the SQL statements that consume the top few percent of resources. The "Windchill Explorer" tool has some facilities for getting to the SQL from the object level.
