The model changes, but the volume with prescribe temperature remains in the same position. To save time by not reassigning affected surfaces after every model change, I was wondering if volume regions are suitable or not for this purpose.

I'm not quite sure what you mean. Some thoughts ...
'... after every model change, ...' The physical position of a volume region is defined by the dimensioning scheme. As the geometry around the volume region changes, the volume region geometry references unchanging features. A la carte.
You cannot prescribe the temperature of a volume or a part.
If all the surfaces of a volume region or boundary surfaces of a part have the same prescribed temperature then there is no temperature gradient across it and nothing interesting will happen within it. Therefore prescribing the temperature at the boundary surfaces of the volume/part region is sufficient.
