Creating a Project template to always use the latest version of a document as a template

Has anyone created a Project template that is able to use the latest enabled version of an existing document template to create a new document in a folder in the new project when the project is created? We've been able to create the Project template that calls out a specific version but we'd like it to always use the latest. The idea being that the template gets updated periodically but we don't want the user or administrator to have to go update the project template to ensure it has the version specified correctly.
