I cant think of any limitation in using a pick field and being able to set data afterwards.

You say that you have included this field into a document, perhaps the document editability rule may cause the issue?

Document editability rule is driven by the state model and by properties on document node and document root level. There will be a need to review your specific configuration to help you solving this issue.
