In general, it is considered best practice to build 4 sided surfaces and then trim them to create the desired surface geometry (i.e. a 3 sided surface by trimming a 4 sided surface). So you would be well served by using 4 sided surfaces whenever possible and then trimming them to get what you need.

 

3 sided and N sided surfaces are possible using STYLE features but are generally not as robust as 4 sided surfaces.
