I must be stupid. I can't figure out how to add axis labels to an X-Y plot in Prime 5. I found a new features post from a little while back that mentions the capability, but no hint of how to turn them on. Nothing obvious in the software help either. Can some kind soul steer me in the right direction?

The native 2D plots in Prime 5 still don't provide that "advanced" feature "labels". Incredible, but true.
PTC has implemented a third party tool for 2D-plots (kind of an indictment or evidence of incapacity) which in some respect is better, in other respect is even worse than the native plots. This third party tool can be accessed via menu "Math"-"Chart Component" and provides rudimentary chart and axis titles (but only static text!).
Prime in general and its plotting capabilities in particular are nothing but a big tragedy.
