Is there a way to cover the gadgets in the gadget library with a default image?
And when the gadget is added in a dashboard is the widget visible?

There is no specific functionality for this in ThingWorx.
One way to achieve this would be to add an Image widget on top of the Gadget at Gadget Library Mashup level which would therefore be displayed in the Gadget Library Mashup but not in the Gadget itself. However you would need to make sure to keep the "+" icon of the Gadget visible so that users can add it to a Dashboard.
If the Image widget covers the "+icon" at Gadget Library Mashup level users would not be able to add the Gadget to a Dashborard.
