We have finally installed our Experience server on our own infrastructure, however, when I scan one of the thingmarks provided, it still points to, or wants to connect to the other servers. Can anyone give me some assistance on this ?

I believe the thingmark what you use is not register to your server. But you can use it if you rset your server URL in Vuforia View. You can set the URL depending on the mobile device (on Android and IOS via setting of the app)
but the most easy way is to scan the QR code form the project e.g.:
But as @sdidier suggested the best way is to register your server in GXI and generate thingmark with the correct domain number (this should be done by explicit request to PTC technical support)

By the way, it is possible to avoid to register to GXI server an On-Premise Experince Service.
In Vuforia View, setup the URL to point on the Experience Service.
