When using family table to suppress features you can choose to have a * instead of Y/N.
What will the result be, will it have the same value as the generic model or will it be unstable?

The * means it will follow the generic. So if the generic feature is surpressed, it will be surpressed in the instance or if the generic feature is not suppress, it will not be suppressed in the instance.

My general rule is to never leave the *, I always want to explicitly define Y or N (for feature suppression in this case). Of course there are always exceptions to my rules but generally speaking, you always want to explicitly define the instance.
