In Mathcad 15 you can break an expression into two or more lines using Ctrl Enter. How do you do this in Prime 3.1?

Wait for Prime 3.2 at least. See:
How can I input long expressions which need to go into multiple lines?
Success!

From what I've seen, PTC has this feature planned (for the moment) for release 4.0. It's actually an improvement over the Mathcad 15 functionality because it doesn't have to be a + operator at the break.
For now, however, it can't be done in Prime 3.0/3.1. You can, however, shrink the font size on the equation if you need just a little more room.

Are they planning on adding just the - operator or others?

At least +, -, *. I think that's all, but perhaps also inline division

Well that will have to go down as an improvement then
