I have a series of lookup tables that I would like to convert into a 3D response surface so that I can determine output values at intermediate input values rather than just assume linear interpolation. Can anyone help point me in the right direction?

If linear interpolation isn't good enough you could try spline interpolation instead.
This example is straight out of the help in Data analysis handbook
