We ended up restoring to a backup of the DB and got the system back up and running.

Your VM restart didn't change the database IP?

You also didn't change anything within the database content?

When Thingworx is installed and initialized aside from the configuration that points to the database,

I believe, it will 'pair' itself to that specific schema, so you can't just go swapping dbs, not sure if anything got corrupted on restart.
