Does Mathcad Prime 2.0 have any feature that allows me to express math symbols and data as "text only"?

No. you cannot automatically convert a Mathcad formula to text, or vice versa.
As Richard said I'm afraid there isn't any way at the moment.
Hopefully when scriptable objects are brought into Prime it will be possible.
