I have a problem: I use a material with user-defined parameters on a model; when I create the drawing, I want to insert a symbol that automatically includes the instructions for producing the component, and I would like the material parameters to be automatically inserted. How can I do this?

then, when i realize the drawing i use a symbol to describe better how to produce the part and i want to use one of the parameter from material to substitute, for example, the value 200 in the image below

please upload testing data set (part+drawing+symbol files).
Based on the image of your above post, which is all text. I would consider using a note rather than a symbol to place this information on a drawing. You can store the note as a text file and import it to a drawing using the note from file function. If you use consistent parameter names in your models, then the note can use those parameters based on the active drawing model when you place it in a drawing.
Including Parameter Information in Notes
Unfortunately screenshot is a part of entire symbol in which i have also sketched parts (triangle) and some area to be filled with drop down menu
so using simple text isn't suitable
I would use a note for what you show as the whole symbol above as well. I suppose it is a personal preference but IME it is easier to maintain/update text files than Creo drawing symbols. For things like this it is often quality or supplier engineering departments that do not even have the ability to work in Creo that own these standards, so the text files allow them to update the standards without the use of Creo.

I don't understand the question of a drop down menu used in a note.
You can include the circumscribed triangle symbol in the note text file. As long as the symbol is in the Creo session memory then it will be placed with the note when you create it on the drawing. Be advised that getting the spacing can get tricky with symbols used in notes so you may have to iterate to get formatting as you want.
To Add Custom Symbols to a Note
You can also exploit drawing templates to improve productivity for these types of repetitive tasks.
drop down menu is useful when you want to select beetwen only a few choices and avoid mistakes.
I use symbols instead of notes precisely because the position of drawn elements maintains the correct spacing, and then you can choose between different variants through Grouping
It is possible to restrict the choices for variable text in a symbol which is what I think you are describing with the drop down menu.
