We juts got a new laptop and will be installing CREO M060 but held off due to the FRC robot build season. We'd like to know if we load m060 on the new laptop will we still be able to open all our CAD files in M010 Creo which is still on our other laptops ?

you forgot to mention the version.Anyways if its the same version there should be no problem at all.

Creo 3.0 M060 files will open in Creo 3.0 M010 without any problem.

The answer is correct, though a small clarification:  if the files are depending on some fix that was made in an intervening build, then retrieving in the old build, naturally this fix isn't there, which could make the behavior different.  It's not often an issue, but is the main driving force behind companies standardizing their users (and sometimes their supply chain) on a particular build.
