How can I re-assign a task in a workflow for Approve/Deny to a specific role, lets say CA1 role, instead of a specific user?

You can not do that.

The users Task that you would like to reassign, is assigned to a one user therefore you can just reassign it to an another user.

If you need to assign the approving task to more users you need to redefine Workflow template where you chose which role is used.
