Just a brief addition to Michael's list of resources:

You can find information about changes that affect UI behavior, may affect existing customizations, and so on in Windchill New and Changed For This Release, which is available in PDF and in the Windchill 10.1 Help Center. This information is now updated for every MOR.
The Windchill Upgrade Guide, which is also available in PDF (8.x to 10.1 or 9.x to 10.1) or in the Windchill 10.1 Help Center.
The Windchill Upgrade Reference, which complements the Windchill Upgrade Guide by providing additional information about the Upgrade Manager and expanding upon specific steps in the upgrade procedure.
