What is the best way to upgrade the ThingWorx version without impacting any data in production.

There is not one answer to this as it heavily depends on the installed products, architecture and platforms.

A guideline could be to look at the supported upgrade paths here

and in Release Advisor.

You would first do the upgrade on a test system and validate it there.
