How can we edit the name of an organization?

It's not clear where you need to make this change.  But the following article may help:  How to change the Logo in the Banner?

    If you are referring to the User organization (not the logo) entity itself, you cannot change it. You may duplicate the entity, give it a desired name, but then you'd have to manuall readd permissions.
