Best Practice for Options & Choices

Can anyone provide some insight on how you work with O&C. 

We define most options as 'required option' and 'single choice selection' but also create a choice 'without xx' even if we do not have any bom elements connected to the 'without xx' choice.

Any other way makes us fail to filter out the correct Variants.
