How to catch empty roles

We allow users to add and remove participants from a workflow task.  I can catch empty roles in the future, but how do you catch the current task if a user removes all participants in the current role they are an approver?  Right now when you remove the last user, it hides the ability to add new users and just processes the task as if you Completed Task.
