generic accounts which does not have email id associated with it never appears in recent participants list. Is there an alternative method for users to be listed in the recent participants without requiring an email association?

Email is required. It is also mentioned in a documentation. 

You can use fake email, but the email has to be set.

The email is required for many features in the Windchill even though the value is not required.
