I have saved a copy of a assembly model using save a copy under file in Creo.

I want to break the links in the model so I can delete parts in the copy of the model I saved. How do you do this?

If I can’t break the links, when I reopen the copy where I have previously deleted parts regenerating errors occur with regenerating message stating x number of missing model

Those Things DO NO HAPPEN in Creo Elements/Direct Modeling - one more TIME WRONG forum used!

BTW you dont have those kind of dependencies in Creo Elements/Direct Modeling: it is more easy to use.
