Is there a way to add a field to the datashape that is being used by a stream ? When I add a field to a stream's datashape to start recording another property for example, all the previous data columns get messed up..

Which TW are you running? I had a similar problem with some TW versions.

6.5, but I think I had this problem with earlier versions too..

I had the problems on 6.5."something" precisely, right now I'm on 6.5.7 without this kind of problems.
